French Carrot Salad

Ingredients

2 Lbs carrots

7 garlic cloves

A handful of fresh mint leaves

​

For the dressing:

​

2 Tbsp Dijon mustard

5 Tbsp balsamic vinegar

4 Tbsp lemon juice

10 Tbsp olive oil

1 Tbsp sugar

 Salt and pepper to taste

Instructions

​

1 - Rinse and peel the carrots.

 

2 - Peel the garlic.

​

3 - In a food processor, crush or shred the carrots with the garlic to desired size. Transfer to a large bowl.

 

4 - Wash the mint and remove leaves from stems. Chop with a sharp knife and add to the carrots.

​

5 - Make a dressing with the rest of the ingredients, pour over the carrots and mix well.
