Quinoa Salad

Ingredients

(For 10 people)

4 to 6 cooked sausages of your choice, cut into pieces

1 cup uncooked quinoa

2 cups water

1 onion, minced

1 red pepper, diced very small

2 green onion branches, chopped 

1 15oz can sweet corn, drained

3 tomatoes, cut into cubes

1 zucchini, shredded

2 garlic cloves, minced

1 Tbsp dry parsley

 

 

Dressing:

 

1 Tbsp Dijon mustard

2 Tbsp balsamic vinegar

6 Tbsp lemon juice

8 Tbsp olive oil

 

 

Instructions

 

1 - In a skillet, bring the water and the quinoa to a boil. Reduce heat to low, and simmer covered for about 15 minutes. Allow to cool completely.

 

2 - In a small bowl, make the salad dressing by whisking the mustard, balsamic vinegar, lemon juice, and olive oil.

 

3 - Throw everything in a large salad bowl, stir and reserve in the fridge until serving time.

** Add avocado for more flavor.
