Tchitchis

Ingredients

(For about 60 tchitchis)

 

4 Tbsp vegetable oil

2/3 cup sugar

3 eggs

3 1/2 Tbsp orange blossom water 

The zest of 1 orange (optional)

3 cups flour 

2 tsp baking powder

A pinch of salt

Sugar (optional)

Instructions

(Use a stand mixer if you prefer especially if you double the recipe!)

​

1 - Mix together the oil and the sugar, add the eggs and stir.


2 - Add the orange blossom water, the zest (optional), and stir.


3 - Add the flour, the baking powder, and the salt and form a ball.


4 - Wrap the dough in plastic wrap and place in the fridge for 30 minutes.


5 - 30 minutes later... Cut dough into pieces and roll into long cylinders.

 

6 - Cut the cylinders into even pieces (about 1 inch) and roll into balls.


7 - Boil canola oil in a deep frying pan or use a deep fryer and fry the tchitchis a handful at a time for about 3 minutes. They should be golden-brown on both sides.

8 - Transfer to a sheet lined with paper towels to absorb excess oil. 

​

9 - Transfer to a bowl or a serving plate and sprinkle with sugar (optional).
