Genoise

Ingredients

 

6 eggs

1 1/2 cup + 3/4 cup sugar

3 cups flour

1/2 cup + 1/4 cup canola oil

3 tsp vanilla extract

1 1/2 tsp baking soda

1 1/2 tsp baking powder

1 1/2 tsp salt

1 1/2 cup milk at room temperature

 

 

 

 

Instructions

 

 

1 - Preheat oven to 350°F. In a large bowl, mix together the flour, baking soda, baking powder, and salt. Set aside.

 

2 - In another large bowl, beat the sugar and the eggs together until white and doubled in volume. Add the oil and vanilla extract.

 

3 - Sprinkle dry ingredients over the wet mixture and fold until well combined, then add the milk. DO NOT OVER MIX.

 

4 - Pour your batter in a springform pan previously buttered and floured or lined with parchment paper.

 

5 - Bake for about 45 to 50 minutes. The top should be golden brown. 

 

6 - Allow to completely cool off before removing the genoise from the pan.

 

7 - Cut your genoise in 3 or 4 layers and fill your cake with your favorite filling.
