My Tabbouleh

Ingredients

 

10 oz regular couscous (uncooked)

1 bell pepper diced (any color)

1 15oz can sweet corn, drained

1 15oz can tomato sauce

1 big onion, diced

2 branches green onions, sliced very thin (optional)

5 medium tomatoes, diced

1/4 cup olive oil

4 Tbsp lemon juice

1 tsp paprika

Herbes de Provence to taste

Instructions

​

1 - In a large bowl, combine all the ingredients. Cover and reserve in the fridge for a minimum of 2 hours.

​

2 - At serving time, if it looks too dry, add more olive oil.

​

 

Serve as a (cold) side dish with sausages or grilled meat.
