Coconut Cookies

Ingredients

(For 24 cookies)

 

1/2 cup soft butter

1/2 cup sugar

1 egg

1/2 cup + 1/3 cup + 2 Tbsp flour

A pinch of salt

1 tsp baking powder

1 cup + 1/4 cup coconut flakes

Instructions

 

1 - Preheat oven to 350°F.

​

2 - Using a grinder, grind coconut flakes until smaller in size.

 

3 - In a bowl, cream the butter and sugar.

 

4 - Add the egg and mix.

 

5 - Add the flour, salt, and baking powder and mix well. 

 

6 - Add the coconut flour and mix until well combined.

 

7 - Scoop 24 little balls (dough will be sticky), and transfer onto baking trays lined with parchment paper leaving enough space between the cookies to allow them to spread without touching each other.

 

8 - Bake for about 10-15 minutes or until edges are slightly golden.

​

9 - Allow to cool before removing them from the trays.
