Yogurt Cake

Ingredients

 

2 big apples

3 eggs separated

A pinch of salt

1/2 cup sugar

The juice of 1 lemon

1/2 cup plain yogurt

1 tsp vanilla extract or rum

1/3 cup flour

1/3 cup cornstarch

1 Tbsp baking powder

2 Tbsp vegetable oil 

Powdered sugar (optional)

 

 

Instructions

 

1 - Preheat oven to 350°F.

 

2 - Peel and roughly cut the apples into pieces. 

 

3 - In a large bowl, whip the egg whites with the salt. Whip until stiff. 

 

4 - In another bowl, beat the yolks with the sugar and lemon juice. Add the yogurt and vanilla extract (or rum), and stir.

 

5 - Add the flour, cornstarch, and baking powder. Stir to combine then add the oil and stir until smooth.

 

6 - Fold in the whipped egg whites and add the apples. Stir until just combined.

 

7 - Pour the batter into a greased and floured pan.

 

8 - Bake for about 40 minutes.

9 - Once the cake has cooled, sprinkle with powdered sugar (optional).
