Rustic Cookies

Ingredients

(For about 65 cookies)

1 cup + 1 Tbsp soften butter

1 cup sugar

2 eggs + 1 egg yolk

1 tsp vanilla extract

A few drops almond extract

1 cup 1/2 + 1/4 cup almond flour

3 cups flour

1 tsp baking powder

A pinch of salt

Instructions

​

 

1 - In the bowl of a stand mixer, cream the butter and sugar.

​

2 - Add the eggs, vanilla extract, and almond extract. Beat until smooth.

​

3 - Add the flour, almond flour, baking powder, and salt. Beat until dough comes together.

 

4 - Wrap the dough in plastic wrap and chill in the fridge for about 15 minutes.

​

5 - Line baking trays with parchment paper.

​

6 - Preheat oven to 350°F.

 

7 - Using a measuring Tbsp make small balls and evenly space them on the baking trays.

​

8 - With a cookie stamp, a cookie press, (or the back of the fork), make a print by pressing down gently.

 

9 - Bake one tray at a time for 12 to 15 minutes.
