Madeleines

Ingredients

(For 24 madeleines)

​

1 Tbsp melted butter for the mold

2 eggs + 1 yolk 

1/2 cup sugar

The zest of 1 lemon (optional)

1/2 tsp baking powder

1/4 tsp vanilla extract or more to taste

1/4 tsp vanilla powder

1 cup flour

7 Tbsp melted butter

Powdered sugar for decoration (optional)

1/4 cup mini chocolate chips (optional)

Instructions

​

1 - Grease a madeleine mold with 1 Tbsp melted butter and reserve in the fridge.

 

2 - In a large bowl, whisk the eggs and the sugar until smooth and white. 

 

3 - Add the lemon zest (optional), baking powder, vanilla extract, and vanilla powder. Whisk until combined.

 

4 - Add the flour in three times, whisking in between each addition.

5 - Pour the melted butter and whisk until smooth. (Add in chocolate chips - optional)

​

6 - Reserve in the fridge for one hour.

​

7 - After an hour, preheat oven to 350°F. 

 

8 - Take out the batter and mold from the fridge. Do not stir the batter.

​

9 - Scoop small amounts of batter and evenly distribute onto the mold.

​

10 - Bake for 7 to 10 minutes.

​

11 - Allow to cool before removing from mold.

​

12 - Sprinkle with powdered sugar (optional).

​

** Use lemon extract instead of the vanilla for lemon madeleines!
