Gingerbread Cookies

Ingredients

(For 15 cookies)

6 Tbsp soft butter

6 Tbsp brown sugar

2 Tbsp honey

1 egg

1 1/4 cup + 6 Tbsp flour

2 1/2 tsp gingerbread spice blend

1 tsp baking soda

A pinch of salt

Sugar Coating

​

3 Tbsp regular sugar

1/2 tsp gingerbread spice blend

​

Instructions

 

1 - Preheat oven to 350°F and line baking sheets with parchment paper.

​

2 - In a small bowl, mix together 3 Tbsp regular sugar and 1/2 tsp gingerbread spice blend. Set aside.

 

3 - In the bowl of a stand mixer, cream the butter and brown sugar.

​

4 - Add honey and stir.

​

5 - Add egg and stir.

​

6 - Add the flour, spice blend, baking soda, and salt. Stir until combined.

​

7 - Roll dough in the palms of hands to create smooth balls, then coat them in sugar/spice coating mix.

 

8 - Place the dough balls on the baking sheets about 2 inches apart. 

​

9 - Bake for 13-15 minutes. (The cookies' edges will be done but the centers will continue to set after they're removed from the oven.)
