Gingerbread Cookies

Ingredients

(For about 24 cookies depending on the size of cookie cutters)

1 1/2 + 1/3 + 1/4 cups flour

2 tsp baking powder

1 cup brown sugar

1 tsp ground ginger 

1 tsp ground nutmeg 

1 tsp ground cinnamon 

1/2 tsp ground cloves 

1/4 tsp cardamom powder

1 stick of soft butter 

1 egg

3 drops orange extract or 1 Tbsp orange juice

3 drops anise extract (optional)

1/3 cup honey

Frosting of your choice, glaze, or royal icing (optional)

 

 

Instructions

 

1 - Preheat oven to 325°F.

 

2 - Mix all the dry ingredients first, then add the butter and mix until you obtain a sand-like texture.

 

3 - Add all the remaining ingredients. Stir to combine and form a ball. Wrap dough in plastic wrap and place in the fridge for 15 minutes.

 

4 - On a floured surface, spread dough with a rolling pin. Use cookie cutters to make little ginger men. Place cookies on baking trays lined with parchment paper or use non-stick sheet pans.

 

5 - Bake for 7-10 minutes.

6 - Use icing, glaze, or frosting to decorate the cookies (optional).
