Dad's Tabbouleh

Ingredients

 

10 oz regular couscous (uncooked)

Half a cucumber cut into small squares

1 15oz can diced tomatoes

2 15oz cans tomato sauce

4 Tbsp lemon juice

4 Tbsp olive oil

1 medium onion sliced

2 apples cut in medium squares

Salt and pepper to taste

2 Tbsp of dried mint or a handful of fresh-cut mint leaves 

 

 

Instructions

 

1 - In a large bowl, combine all the ingredients together with a spoon, cover, and reserve in the fridge for about 2 hours.

 

Serve as a (cold) side dish with sausages or grilled meat.
