Chocolate Genoise

Ingredients

 

3 eggs

1/2 cup sugar

1/2 cup + 2 Tbsps flour

1/3 cup cocoa powder

2 Tbsp melted butter

 

 

Instructions

 

1 - Preheat oven to 350°F. In a large bowl, mix together the sugar and the eggs and beat with an electric whisk for 5 minutes on the highest setting, then 10 minutes on medium setting. You should have a mixture that has doubled in size and is very light.

 

2 - Sift together the cocoa and the flour. Add this to the previous preparation and combine incorporating air. Add the butter and stir gently.

 

3 - Pour the batter in a buttered cake pan or a baking tray with parchment paper and bake for 25 to 30 minutes for a cake pan, or 15 minutes if you use a baking tray. 

 

4 - Cut the genoise in half and spread with the topping of your choice (jam, fresh fruits, whipped cream, buttercream, or even make a black forest...)
