Almond & Raspberry Shortbread Cookies

Ingredients

 

1 egg

1 1/2 cups flour

1/2 cup unsalted butter softened

1/2 cup sugar

1 Tbsp heavy whipping cream

A pinch of salt

1 Tbsp almond extract

Raspberry jam

Instructions

​

1 - In a large bowl, mix together the sugar and the butter and stir until creamy.

 

2 - Add the cream, the almond extract, the egg, and the salt. Stir together until combined.

 

3 - Add the flour all at once and combine until you can form a ball.  

 

4 - Put in the freezer for about 5 minutes. 

 

5 - Preheat the oven to 350°F.

 

6 - Spread the dough with a rolling pin on a floured surface. Using cookie cutters, make shapes.

7- Move the cookies to a sheet pan lined with parchment paper.

​

8 - Cook for 10 minutes.

​

9 - Allow to cool off and spread raspberry jam on one cookie, place another cookie on top.
